Digital Controllers for Warming Ovens
DegreeC has developed a series of digital controllers for the warming oven marketplace where equipment upgrade margins are very slim, and the associated controls must be extremely cost-effective. On lower cost offerings, LED segment displays are in demand and supercede older twist knob interfaces. This is an area where hydraulic thermostats have been used for years, due to perceived reliability and low cost, however from an end users perspective, massive temperature overshoots are a serious drawback, as well as difficult to interpret interfaces.
A reading was taken in a warming oven comparing a hydraulic thermostat to a digital control. As you can see in the chart below, the hydraulic thermostat created massive temperature fluctutations in a two hour period, even though the setting was set to maintain at 150°F. The DTC-1 maintained the 150°F setting ±2° (green). Massive swings in temperature affect food quality as well as energy usage.
